Cutting on plastic boards can release 14-79 million particles per person per year, amounting to roughly 7-50 grams of plastic annually.

Instead of plastic, experts recommend choosing cutting boards made from wood, rubber, silicone, or composite materials. These options are food-safe, gentle on knives, and less likely to harbor bacteria that can cause foodborne illnesses. Wooden cutting boards, in particular, have the added benefit of being easier on your knives, lasting longer in the kitchen, and not needing frequent replacement.
